Começou a surfar aos 9 anos em Maresias, litoral norte de São Paulo. O paulista de São Sebastião estava destinado a ser o primeiro. Não só o primeiro brasileiro a conquistar o Mundial de Surfe da ASP, mas também o primeiro surfista que não tem o inglês como língua oficial a chegar ao topo do surfe mundial.

Aos 11 anos, Medina conquistou seu primeiro campeonato a nível nacional, a etapa Rip Curl Grom Search, em Búzios-RJ. Foi só o começo para o brasileiro, que começou a colecionar conquistas nas competições de base e amadoras. Com 14 anos, já disputava em igualdade com profissionais, e conseguiu derrotar Adriano Mineirinho, seu ídolo.

O brasileiro se profissionalizou em 2009 e fechou um contrato com a Rip Curl. Pouco depois, já estava vencendo uma etapa do Mundial de Surfe. No ano seguinte, foi o primeiro brasileiro a vencer a etapa Australiana de Backside (Gold Coast Australia). Tudo isso só foi possível com o apoio da mãe, Simone, e do padrasto, Charles, que, ao ouvir do então garoto de 10 anos de idade sobre seu sonho de ser campeão do mundo, adotaram o sonho como seu – apesar de a mãe não gostar, a princípio, da ideia de o filho largar os estudos.

Apesar de dedicar todo seu tempo ao surfe, Gabriel terminou o segundo grau e pretende continuar os estudos. Até porque precisa dar o exemplo aos dois irmãos mais novos, Felipe, de 18 anos, e Sophia, de 9. A caçula, aliás, já mostra a mesma inclinação para o surfe, tendo foto com a prancha no perfil do irmão no Instagram. A mãe já confessou ter medo da influência da fama no filho, criado numa família simples. Ela vai ter ainda mais trabalho a partir de agora, com Gabriel sendo destaque no mundo todo e no país do futebol, que nas últimas semanas começou a olhar, além da bola, para as ondas.
